Bouillabaisse is a traditional Provençal dish made with Mediterranean fish. A stew, cooked in water or white wine, seasoned with garlic, olive oil or saffron, is served in two stages: first the soup, then the fish. The fish soup is eaten with garlic croutons, spread with rouille and olive oil, and boiled potatoes.
The fish, whose main quality is its freshness, is made up of a combination of scorpion fish, weever fish, John Dory, conger eel, sea bream, whiting, burbot, and gurnard.
Marseille has a “bouillabaisse charter” – a detailed recipe that protects the authentic taste of bouillabaisse. For fish lovers it’s a must – dip into a centuries old tradition. .
